Heissenberg is translated as the hot hill and is located in the township of Nothalten. These hillsides exposed to the South benefit from a dry and hot climate, are composed of a siliceous subsoil of sandstone type Psammites. This soil allows to obtain crystalline and mineral salivating wines.

Wine tasting : Gourmet white wine, racy, pleasant, lemony with hints of anise, complex mineral definition. Beautiful length, nervous and sharp vivacity.

Gastronomy :

We like to associate this wine with delicate dishes, such as clogged appetizing sea, a turbo fillet with shellfish and caviar Chantilly … Or more simply with grilled sea bream, poultry, goat cheese … and more traditionally with choucroute or baeckaoffe.

Wine making process

We grow our vines with the greatest respect to obtain the quintessence of our soils, this practice is applied on all our vineyard. We practice Guyot Poussart pruning, manual disbudding, sowing of green manure, we apply herbal teas, decoctions or purins of wild plants. We adapt our interventions to the cycle of the moon.

We pay meticulous attention to the vinification which starts with a manual harvest, then a long pressing of whole grapes, a static settling, a slow & regulated fermentation at 18°C, and a long maturation on fine lees.
